Easy Corn and Pepper Dip

I don’t know about you, but I love anything that is a “prep only” dish, meaning there is no “cooking” involved.  This easy corn and pepper dip fits that bill perfectly.  Creamy, refreshing, and a little spicy are the hallmarks of this simple summer side dish.  Another bonus with this recipe is that there are only 5 readily available ingredients!  There is an optional sixth ingredient, but honestly I am the only person in our family that likes olives, lol.

What is Corn and Pepper Dip

This recipe is a ranch based dip, but not a prepared ranch dressing, we’re going with the seasoning packet.  The other ingredient that really gives this dip it’s creamy consistency is cream cheese.  After that, the sky really is the limit with what you want to add in.  We opted for a fresh red bell pepper, a Jalapeño, and a can (drained) of whole kernel corn.  I also had a small can of sliced olives, but I was the only person that wanted them, so I just sprinkled some on as I chowed down on this dip! 🤣

How to Make Easy Corn and Pepper Dip

  1. Rinse and dice your peppers – A small to medium dice works best here.  Remember to wear gloves when cutting up jalapenos!  Use as few or as many of the seeds to adjust your level of spiciness.
  2. Open your can of corn and drain well (do the same with your olives if using)
  3. In a medium mixing bowl, combine all ingredients (ranch seasoning packet, brick of cream cheese, red pepper, jalapeno pepper, and corn)
  4. Using a hand mixer, mix on low speed until everything is thoroughly incorporated
  5. Serve immediately or refrigerate overnight before serving.

Ingredients

  • 1 15 oz. Can of whole kernel corn drained
  • 1 8 oz. Block of cream cheese
  • 1 1 oz. Packet of ranch seasoning
  • 1 Whole Red Bell pepper
  • 1 Whole Jalapeno Pepper
  • 1 2.25 oz. Sliced black olives optional

Instructions

  • Rinse and dice your Red and Jalapeno peppers, being careful to remove the seeds of your jalapeno if you wish
  • Combine all ingredients into a medium mixing bowl
  • Using a hand mixer on low speed, mix until thoroughly incorporated
  • Sever immediately with your favorite chips or crackers!
